Process: The unique ‘Monsooning’ process, where harvested beans are exposed to the monsoon rains and winds for a period of 2-3 months, resulting in a dramatic alteration in bean size, colour, and taste.
Fact: The ‘Monsooning’ process was discovered by accident in the era of wooden sailing ships, when coffee beans transported from India to Europe changed characteristics due to the sea voyage’s damp conditions.
SUMATRA
Elevation: Typically grown at altitudes of 800-1,500 metres, enriching its flavour with depth and body.
Process: Mainly wet-hulled, a unique method that imparts Sumatra’s signature earthy and spicy notes.
Fact: Sumatra’s coffee is harvested in a volcanic region, which imparts rich minerals to the soil, enhancing the distinctive flavour characteristics of the beans.
